golden syrup & oatmeal muffins

I didn't think I was addicted to the Internet but with the net down at home for the last couple of days, I was about to drive myself nuts. I was hitting at the keyboard willing the browser to start working by some miracle (which it didn't) and just before dinner tonight, the grumpy version of me was moping and refusing to go out for dinner with the parents and at the same time muttering about why the internet still wasn't fixed. I think my parents got the point, dad stood beside the router looking at the buttons flashing for a good hour and well, it's now fixed - turned out a cable was plugged in incorrectly (don't ask me how but well, I'm glad that I have the internet!) Thanks dad!

Anyway, that was my day and on a slightly merrier note, here's a recipe for golden syrup and oatmeal muffins which I want to share because I think it's great. All the ingredients in it are likely to be found in your pantry and they taste absolutely scrumptious straight out of the oven or the next day.

Preheat oven to 180 degrees. Line 10 holes of a muffin tray. Measure out 75g golden syrup and place in a large bowl.

Add to the golden syrup 100g softened melted butter.

In a separate small bowl, combine 170g milk and 2 eggs and mix lightly with a fork.

To the golden syrup/butter mix, sift in 285g plain flour, 125g brown sugar, 2 tsp baking powder, a pinch of salt and fold together. Add in the milk/egg mix and lightly fold. Stir in 50g rolled oats.

Spoon in batter to lined muffin holes. Sprinkle over the top rolled oats and demerara sugar.

Bake for 20 minutes until the muffins are well risen and golden in colour.

Transfer to a wire rack to cool.

FYI: I'm back to being on my muffin craze and have marked up a whole lot of recipes in the book that I got this recipe out of (for those curious, the book is 'mad about muffins' which more than accurately describes me!) However, also trying to clean up the pantry a little so doing a lot of recipe alterations and making do with what I have to save the trip to the supermarket. Hopefully all goes well and you should see a few more recipes up soon!

These look pretty easy and great for breakfast! Best thing about muffins is that they freeze and defrost well too.
